The Human Eye

As most of you know I am totally obsessed (if that be the word) about eye colors. I have finally came to terms that it is okay to date, like, eventually marry a person with brown eyes. I always wanted to marry someone (and maybe I still will???) with blue eyes just for the mere fact that our children will have blue eyes. That doesn't always happen, and even if you do marry someone with brown eyes you can still have children with blue eyes. That's a mouth full of useless information?!?! What I'm getting at here is that I am starting to like brown eyes, AND I think that brown eyes are actually pretty attractive after all! Now I have nothing else to be picky about in looking for a future husband!

Two Things I Want!

There are two things that I want in this life, and by George one of these day's I'm going to own these two things.
The first is a Tea Cup Poodle. Oh MY GOSH! These are the CUTEST little dogs I have ever laid eyes on. As I have been working at SunRiver there are all these old folks that come in and out of the sales office. Every Saturday there is a couple that come in with their little baby - which is a Tea Cup Poodle. The first time I saw this little bundle of joy my heart ached for one of these. I got talking to the woman and found out how much she paid for the little pooch - way to much money for me to afford right now. (For your curiosity - she paid over $1,000 - Crazy, I know! But they can also range in price up to $5,000.) Just so everyone knows...SOMEDAY I am going to own a cute, tiny, black, Tea Cup Poodle!
Number 2 item I will some day own is a Bonsai Tree. First off, being 27 and single most single women have cats to keep them company why they are waiting for Mister Right - not me! I have luscious green plants to keep me company, and they are so beautiful!!! I also want to thank Aunt Debbie for watching my green babies why I am in Alaska! Anyhow,I'm starting to think that my plants need another addition, and I have always wanted to have a Bonsai Tree - pretty much every since The Karate Kid. I just think they are beautiful plants/trees and one would make a nice addition to my family of plants.

Those are my two wants in life. Most people would probably think, gosh wouldn't she want to have a husband, and a family??? Well Yes, yes I would. Those things are NOT in my path right now, so until those figments of my imagination come about I am going to be the proud owner of a Bonsai tree, and a Tea Cup Poodle!

Easter weekend was a blast!!! It was so great to have so many family members here to celebrate this wonderful holiday! I chose to post a picture of me and "my sisters", or so I like to say. I always thought of Anisa and Summer as sisters, so here is to our bondship - lame I know, but sometimes I can get a little mushy???

Hanging Out with the Married Friends


On Friday I got together with two of my high school buddies, who are of course married and have several kids. It's always fun to see them, hang out, and catch up on all our lives. We met up at Alisha's house and ordered pizza; I disgustingly provided the dessert - nasty oatmeal chocolate chip cookies. The reason I say disgusting is because I don't like them but MinDee and Alisha absolutley love them, so being the kind person that I am, I made them their cookies. Alisha has three darling kids, and MinDee has two cuties, and one on the way. I know MinDee would have rather left the kids with the husbands, but I really appreicate them bringing them and letting me play with them. Alisha's kids taught me how to play the Wii, we even played a few of the old school Mario games, and I bowled. (Aren't Alisha's kids the cutest! Her son is solid and darling. I'm not kidding, after just holding him for about ten minutes I got my workout for the day in! Alisha thanks for letting me hang out with you for as long as I did - can't wait to do it again!)

Spring Break in Vegas...





Yes, yes we all know I went to Sin City for Spring Break. The only reason I went was because of the $500.00 gift certificate to Bellagio. Let me set the record straight - the Bellagio is pure luxury even down to the stained sheets on the bed! Life couldn't have been better, not to mention the sauna like heat we had to sleep with. All and all - good times were had in Vegas! What happens in Vegas stays in Vegas. Hung out at the bar, met some guys, went back to the room and stained the sheets some more! If you are still reading this - SERIOUSLY, do you think I would do those things??? Vegas was great - it was fun to see Holly, (since Pam canceled the night before) Holly and I made the most of our two nights. We ate at some favorite restaurants, got pedicures, shopped, and did the tourist thing of "walking the strip". The burning question would I recommend Bellagio? Hmmm...what the heck, you have got to at least be able to say, "I've stayed at the Bellagio!".

Chelsea Lately show on E!


Slowly I have become a fan of Chelsea Handler who is a comedian on E! She also has her own late night show known as Chelsea Lately. It's one of the better late night shows out there - in my opinion. As I have been watching it more and more I have noticed that Chelsea has mentioned the "Mormons" quite a bit. One incident was on her 100th episode this past week, she had Jenny McCarthy as her special guest.
As she was visiting with Jenny McCarthy, Chelsea asked her to talk about her son, who has autism. Jenny McCarthy begins by telling how she was seeking any kind of help possible to try to "heal" her son. At one point she had heard that the Mormons can heal people, so she got on the phone and called the LDS church. Within a few days the church sent over two Elder Missionaries. She was so funny telling the story; she answered the door and was shocked to see two boys who looked like they were 12, who were dressed nicely with two white shirts and ties, but decided to let them come in. When they came in they visited with her and her son. In Jenny McCarthy's words, the boys were trying to play with her son and they had some toy balls that they were playing with when Jenny say's, "Come on Evan, play with the boy's balls." Anyhow, the missionaries ended up giving her son a blessing and she said that it was very beautiful and she is so grateful that they were able to come over to her house of sin.

Back to Chelsea Handler - host of Chelsea Lately...she was raised by a Mormon Mother and a Jewish Dad. I'm always curious to know who was raised Mormon in Hollywood. Chelsea Handler can be pretty racy, but has always been kind when she talks about us Mormons.

I've been on a Mousse Hunt

Recently I just returned from a Mousse Hunt, and it was Delicious. Ever since Applebees came out with those new little desserts known as a "mousse shot", and others, I have died and gone to heaven.Although, as I have traveled around I have tried some tasty desserts in my time. In fact, in Anchorage there is a restaurant known as "The Glacier Brew House" and they have one of the most decadent,and tasty desserts known as the Peanut Butter Pie.That Peanut Butter Pie is a whole other blog, so let me get back to my Mousse hunt! I have been searching websites of recipes to find just the right one and I found it. It's pretty darn close to what I get at Applebees. I added the broken Oreo's and of course whip cream and it turned out rich and divine.

Here is the result of my quest:

Marvelous Chocolate Mousse
1 1/2 cups dark chocolate, chopped
2 tablespoons milk
6 egg yolks
1/4 cup confectioner's sugar
2 cups thickened cream

Place chocolate and milk in a heat proof bowl, set over a saucepan of boiling water and stir constantly until melted and smooth (mixture will be quite thick).
Remove and cool slightly. Place yolks and sugar in a large bowl and beat with an electric mixer for 5 minutes, until thick and creamy.

Beat cream with an electric mixer in a bowl then gently fold through chocolate mixture with a spatula until just combined.

Spoon into 12 x 1/2 cup capacity dishes and chill for 4 hours, until set. Serve with fresh berries if desired. (Or copy Applebees and add crumbled Oreos and Coolwhip)

Serves - 12 Preparation Time - 15 minutes Cooking time - 5 minutes Chilling time - 4 hours. It really does make a lot so make sure you are having plenty of people over!!!
